Blog One



This is my first blog and I wanted it to be fun and hopefully contagious. Being a mom is the greatest thing, but sometimes when you’re juggling time with your baby, your husband, your boyfriend, and your friends and so on, it becomes overwhelming. In order to keep yourself in tip top shape and to continue being the WONDER MOM you really are you need to take time for yourself. Here are some top tips for mommy time, weather you only have 5 minutes or a whole evening, one of these should fit your schedule.

- A hot soak in the tub, or a steamy shower.
- A manicure or pedicure. No time or money to visit the professionals? Do it yourself! You’ll be glad you did!
- Have a girl’s night out. Grab dinner and a movie with a close friend.
- Take a nap! Little one sleeping? Do those dirty dishes later, a nap will refresh you to get the job done better, later.
- Go for a walk or bike ride. Or catch a gym class with a friend.
- Have an adult conversation. Been around your little on all day? Skip the baby talk for a minute and call a family member or friend.

When you’re a busy mother, and you’ve got a family to fed the last thing you need is a 4 hour meal to cook. I’m all for easy and quick meals. Check in weekly for a new meal idea. This week’s easy meal is Slow Cooker Nacho Chicken & Rice Wraps. Think super taco. Set it cooking when you wake up and it’s done by dinner. How easy is that? Super.



What you need:
*Crockpot (4quart or larger)
*2 cans (10 3/4 ounces each) Campbell's® Condensed Cheddar Cheese Soup
*1 cup of water
*2 cups Pace® Picante Sauce
*1 1/4 uncooked regular long-grain white rice
*2 pounds skinless, boneless chicken breasts, cut into cubes
*10 flour tortillas (10-inch)

STEP 1- Stir the soup, water, picante sauce, rice and chicken in a 4-quart slow cooker.
STEP 2- Cover and cook on LOW for 7 to 8 hours or until chicken is cooked through.
STEP 3- Spoon about 1 cup chicken mixture down the center of each tortilla. Fold the tortilla around the filling. Let me know what you think!
